Abstract

Edible fibres are prepd. by the extrusion of a soln. of a protein, extracted from soya, in a coagulating bath, this is followed by neutralisation and continuous washing of the fibres obtd. At least once during the neutralisation operation, the cluster of fibres is passed through several vibrators, so as to disperse the fibres. The vibration process enables edible fibres of uniform quality, pH value and colour to be mfd. easily. Protein is extracted from degreased soya with water, dil. alkali or an acid soln. of a mineral salt, it is dissolved in NaOH, the soln. filtered, deaerated and extruded through a die into a coagulating bath of acetic acid salt. The extruded fibre is drawn and passed through drying rollers into a neutralisation bath, the cluster of fibres then goes into the vibrator where the fibres are neutralised without becoming entangled. After passing through a washing tank, another vibrator, guidage rollers and drying rollers they go to a collecting recipient.
