Abstract
Frozen compsns. of the sherbet type comprise water 18.5-41.5g. pref. 22-35 g. per 100g of final product of sugar, flavouring and an additive which confers a viscosity >335 cps. measured with a Mc-Michael viscosimeter as 25 rpm and 25 degrees C, e.g. a carragheenate. The products are reversible is retain their structure after several successive freezings and reheating and can be prepd. without fatty materials or the addition of protein.
