Process for the stabilisation of a neutral protease (I) in a mixture of (I) and an alkaline protease opt. together with an amylase by the addition of an effective amount of an alkaline protease inhibitor; the inhibitor effect is reversed on the dilution of the soln. The amount of inhibitor used is 50-1000 wt.% of the alkaline protease and enzyme mixture opt. contains 10-4 -10-3 M Ca ions. The process increases the storage life of the protein soln. which is pref. obtained from B. subtilis.
