Abstract

Fruit such as prunes is dryed by placing on horizontal mesh trays stacked in vertically spaced relationship in a unitary structure. To ensure that only a single layer of fruit is placed on each tray during loading a baffle stack is attached to the tray framework and the entire structure tilted so that the trays are vertical. Each tray has an accompanying baffle that defines a shallow chamber above the tray to receive the fruit. When the baffles are in place fruit is exclused from undersired areas. After loading the stack is returned to the horizontal and the baffles removed.
