Abstract

Cylindrical mould for the prepn. of pressed hams has pref. square or rectangular section, with bevelled edges. The opposite faces of the cylinder have two parallel rows of holes, regularly spaced opposite each other. The base and the cover consist of two parallel plates connected by compression springs; the plates fit into the cylinder with sliding friction. Two pins can pass completely through the mould through two opposite holes. The row meat, is transferred from a hopper into the mould and compacted in position; the cover is introduced pushed against the meat and locked in position by drifting the pins ito the holes. Cooking can then proceed and the springs are further compressed by the internal pressure developed.
