Abstract

Iso-alpha-acid extract from hops. Hops are stirred (macerated) in water to break the lupulin glands and disperse the alpha-acids in the water; unwanted plant material is then removed and the alpha-acids heated in alkaline soln. to give iso-alpha-acids. The maceration is pref. carried out continuously in a "shear column" consisting of a series of vertically superposed interconnecting chambers containing paddles (driven on a common axis) and baffles. Pref. the time is not >15 min. temp. is 4-25 degrees C pH 4-7 (or 7-10 if tannins are required in the product). Isomerisation is carried out at the b.pt. at pH 8.5-9.5.
