Abstract

Cake icing contains a classical fondant, a sugar-syrup and an edible oil. The compsn. is prepd. by cold-mixing the fondant with the syrup at 30 degrees C and the oil. The icing gives a brilliant finish which remains on heating, is storage stable, can be sold in sealed packages and may be used straight away. Method obviates heating.
