Abstract

Pan for rising dough for bread is of moulded polystyrene lined with cloth. It permits a regular fermentation without crusting, and always stays at the same temp. The rectangular cross-section gives the min. space requirement in the bakehouse, when they are filled up, this is prevented from entering and cooling or warming the dough.
