Abstract

Cheeses of all forms are matured by making a cut-out at the centre, reducing the mass and producing a crown shape from a round cheese. This increases the contact surface to ferment in the cellars or in special moulding to obtain the same result. Preferably, maturing time is reduced, and development of a sharp taste is arrested. The wt. loss is reduced. The process is applied to Grand Murols cheese.
