Abstract

Chocolates are filled with a mixture of a fruit brandy with the corresponding fruit concentrate in a ratio of 3-0.5:1. The preferred combination are calvados with apple concentrate and pear brandy with quince concentrate. Compositions of the desired viscosity with improved aroma are obtained.
