Abstract
The invention relates to a process for the preparation of low-lactose butter and a butter-like milk-based fat product which process is characterized by the addition of the enzyme lactase, after the milk is churned, to the mixture separated from the aqueous phase consisting of mainly the fat phase or to half-finished butter or finished butter or to a butter-like milk-based fat mixture immediately following the separation of the aqueous phase or at a later stage during the production of the product.
