Abstract
The process described in this specification is capable of decaffeinating green coffee beans with a moisture content close to that used for shipping and storage. The green coffee beans are placed in contact with dimethyl sulphoxide, an aprotic solvent, for separating out at least part of the caffeine. The caffeine is preferably separated out from the solvent by using a solid adsorbent such as activated charcoal.
