Abstract
The process described in this specification improves the decaffeination of both wet and dry coffee beans using a liquid or supercritical carbon dioxide extraction agent, dissolving dimethyl sulphoxide in the extraction agent prior to contact with the beans. The speeds of extraction are much improved, especially in the preferred method in which dimethyl sulphoxide is used at levels close to saturation.
