PROCEDIMIENTO PARA EL TRATAMIENTO MECANICO-TERMICO INCLUIDA LA ESTERILIZACION DE PASTAS FLUIDAS, ESPECIALMENTE PASTAS DE CACAO. LA PASTA SE DESACIDIFICA, DESHUMECTA PARCIALMENTE Y DESGASIFICA CONTINUAMENTE EN CAPA DELGADA A TEMPERATURA INFERIOR A 100 C. A CONTINUACION LA PASTA ES EMBALSADA Y SE AUMENTA SU TEMPERATURA, POR FRICCION INTERIOR, HASTA CERCA DE 150 C. SE MANTIENE ESTA TEMPERATURA EN UN VALOR MEDIO PARA OBTENER LA ESTERILIZACION. LA PASTA EVACUADA CONTINUAMENTE A PARTIR DE LA PASTA EMBALSADA CON RETROCONDENSACION DE LA FASE EN VAPOR SE REBAJA A UNA TEMPERATURA MENOR A 100 C. LA PASTA ENFRIADA SE SOMETE CONTINUAMENTE EN CAPA DELGADA A DESHUMECTACION Y DESGASIFICACION RESIDUAL.
