Abstract
Un método de preparación de un concentrado de proteínas vegetales, blando, desgrasado, esencialmente sin aroma y exento de olor a partir de un material proteico vegetal húmedo y extraído con disolvente, que contiene una cantidad organolépticamente detectable de disolvente, cuyo método consiste en: (a) introducir continuamente el material proteico vegetal húmedo, extraído con disolvente, en un aparato desolventizador con una entrada y una salida de gas; (b) hacer pasar continuamente un gas inerte húmedo a través del material proteico, a velocidad suficiente para fluidificarlo y moverlo como en un lecho fluidificado; (c) mover el material proteico fluidificado en la corriente de gas inerte a través de una trayectoria tortuosa, con lo que todas las partículas de material proteico vegetal son sometidas a una acción fluidificante constante; (d) mantener la temperatura del gas inerte por debajo de 180°F.(82,2°C) y su velocidad y presión suficientes para mantener la mezcla íntima con el material proteico vegetal de manera que este último se encuentre en estado fluidificado y para separar el disolvente residual del mismo durante la trayectoria tortuosa; (e) mantener el punto de rocío a la entrada de gas en el aparato desolventizador entre 100 y 130°F (37,8-54,4°C) y el punto de rocío a la salida de gas del aparato desolventizacior entre 130 y 155°F (54,4-68,3°C); (f) controlar el caudal de material proteico vegetal a lo largo de la trayectoria tortuosa de manera que el tiempo medio de permanencia de las partículas de material proteico vegetal en-contacto con el gas inerte húmedo sea de 1 a 6 horas, con lo que el material proteico vegetal es eficaz y continuamente desolventizado hasta un nivel por debajo del cual el disolvente restante. no puede ser organolépticamente detectado y por debajo de unas 2000 ppm medidas por cromatografía de gas-líquido y (g) separar continuamente el material proteico vegetal desolventizado.
