Abstract

Un método para producir ácido L-glutámico que comprende: (1) iniciar el cultivo de una bacteria productora de ácido L-glutámico, en un medio de fermentación que contiene el azúcar de melazas en una cantidad del 5 al 10% en peso y a una temperatura de 30 a 33ºC; (2) añadir a dicho medio de fermentación una cantidad eficaz de agente tensioactivo o de penicilina, durante la fase logarítmica de crecimiento de dicha bacteria; (3) alimentar repetidamente a dicho medio de fermentación el azúcar de melaza, en una concentración del 2 al 8% en peso en dicho medio de fermentación cuando la concentración de azúcar en dicho medio de fermentación, después o durante cada una de las alimentaciones del azúcar de melazas, en 1 a 2ºC, y (5) recoger el ácido L-glutámico acumulado en dicho medio de fermentación.
