Abstract

2-Ethyl-3, 5, 6-trimethyl-pyrazine is used to enrich the cocoa flavour in cocoa mixes, drinking chocolate, chocolate, chocolate coatings and chocolate pudding mixes. The said pyrazine may also be incorporated in synthetic cocoa flavour.
