Abstract

Un método de producir ácido cítrico a partir de melazas de remolacha por fermentación sumergida con agregados de micelio de Aspergillus Níger o cepas afines de hongos de mohos, que comprender añadir ácido clorhídrico a melazas diluidas que contienen agregados de micelio, denominados gránulos, para reducir el pH a un valor inferior a 3,5 y realizar la fermentación mientras se suministra oxígeno, aire enriquecido con oxígeno o aire a presión superatmosférica.
