Urease inhibitors capable of decreasing the nitrate content in vegetables. The present invention describes the use of at least one urease inhibitor for the reduction of nitrate concentration in arable horticultural species. Urease inhibitors can be applied to these crops, either via foliar or on the soil of the same, when the crops are already developed and close to their harvest in phenological stage 45 or higher according to the bbch scale.
