Abstract
Procedimiento para la elaboración de un producto lácteo y producto obtenido con dicho procedimiento, donde el proceso contempla: la mezcla, de ingredientes sólidos en los líquidos, en un tanque, mediante un sistema específico de mezcla de sólidos en líquidos y acondicionamiento para hidratación durante dos horas a 6 - 8°C; único tratamiento térmico a baja temperatura, a 102°C o 95°C según textura del productos final, y homogeneizado a 55°C y descenso a 25°C o envasado a 90°C según textura del producto final. En una variante el producto es líquido comprendiendo: Agua (65%), leche desnatada rehidratada (30%), azúcar, estabilizador, acidulante, aroma, colorante y antioxidante. En otra variante el producto es cremoso, comprendiendo: Leche parcialmente desnatada rehidratada (55%), agua (40%), azúcar, almidón modificado, estabilizador, acidulante, aroma, colorante y antioxidante.
