Procedimiento enzimático para la producción de péptidos bioactivos.#La presente invención se refiere a un procedimiento para la obtención de un extracto peptídico con actividad inhibitoria de la enzima convertidora de angiotensina caracterizado porque comprende a) hidrolizar leche de vacuno con una metaloendopeptidasa a una temperatura comprendida entre 30 y 70ºC y durante un tiempo comprendido entre 15 minutos y 5 horas, b) finalizar la reacción de hidrólisis mediante la inactivación de la metaloendopeptidasa, y c) obtener el extracto peptídico crudo resultado de la hidrólisis.
