Abstract
Proceso de extracción de componentes de la uva. La presente invención describe un proceso consistente en el tratamientote uva o de sus hollejos mediante pulsos eléctricos de alto voltaje. Este tratamiento permeabiliza las membranas de las células de los tejidos vegetales acelerando la extracción de sus componentes. La aplicación de este tratamiento permite reducir el tiempo de la etapa de maceración prefermentativa en el proceso de elaboración de vinos rosados y el tiempo de la etapa de maceración en el proceso de elaboración de vinos tintos.Grape components extraction process.
