Abstract

El procedimiento comprende soportar barricas sobre una estantería modular especial (3) con posibilidad de giro manual de las mismas; introducir en una barrica vacía una boquilla de aspersión (4) de agua a presión; acoplar a la boca de la barrica unos medios de circulación del agua en circuito cerrado (7), que comprenden una válvula de cuatro vías (12) que incorpora dicha boquilla y que es capaz de ser acoplada estancamente a la boca (5) de la barrica; diluir los posos con agua en el interior de la barrica; aspirar y extraer los posos diluidos; hacer circular por el circuito cerrado y la barrica agua a entre 40 y 70ºC con sosa cáustica; desacoplar de la barrica los medios de circulación del agua en circuito cerrado; y enjuagar el interior en circuito abierto. Particularmente aplicable al lavado y asepsia de barricas de madera para envejecimiento de caldos vinícolas.
