SE DESCRIBE UN PROCEDIMIENTO PARA FABRICAR UNA BEBIDA ALCOHOLICA MEDIANTE FERMENTACION, EN EL CUAL SE AÑADE UNA FUENTE DE NITROGENO ASIMILABLE AL LICOR EN FERMENTACION (12) PARA SUPLEMENTAR EL CONTENIDO EN NITROGENO ASIMILABLE DEL LICOR, QUE INCLUYE CONTROLAR EL GAS EMITIDO POR EL LICOR EN FERMENTACION PARA OBSERVAR LA PRESENCIA DE H 2 S UTILIZANDO TIRAS INDICA DORAS (18), QUE RESPONDEN DE FORMA SELECTIVA A LA PRESENCIA DE H 2 S. SE AÑADE UNA FUENTE DE NITROGENO ASIMILABLE AL LICOR EN RESPUESTA A LA DETECCION DE H 2 S EN EL GAS. ESTO SE HACE DE UNA FORMA PERIODICA DURANTE TODO EL PROCESO DE FERMENTACION. TAMBIEN SE DESCRIBE UN ESTUCHE DE ENSAYO DE FERMENTACION PARA SU USO EN EL PROCEDIMIENTO.
