Abstract

El generador (1) de vapor de agua para un horno de cocina a gas comercial, comprende un depósito (2) de agua con una carcasa (2a) cerrada y estanca, un quemador (3) de gas, y un intercambiador (5) de calor inmerso en el depósito. El intercambiador es construido con una formación de tubos (5a) en paralelo conductores de un caudal Q, de agua calentado, que son abiertos en los dos extremos. Una cámara (9) cilíndrica adyacente al depósito portando los electrodos (19) es usada para el control del nivel (2c) de agua, y al menos un sensor (10,12) de temperatura del tipo de bulbo hidráulico, para la indicación de la presencia de un depósito de cal indeseable, es fijado al intercambiador desde el exterior del generador atravesando la carcasa (2a).
