Abstract

The process and cabin for the removal of microscopic parasites, such as mites and spiders, from pieces of ham (1) or similar involve hot air treatment between 50 and 100 degrees Celsius for between 5 and 10 minutes, sufficient to produce disinfection. The treatment is carried out inside a cabin (4) capable of housing a considerable number of hams, hung in a large capacity cage (2). The cabin is served by a generator of hot air (6) and a series of propelling devices (7) delivering hot air into the cabin. These devices are located on the cabin roof and on its lateral faces and together with the generator establish a closed circuit.
