Abstract
The ultrasonic classification of raw and cured meat products comprises batchwise determination of moisture and texture from the propagation of ultrasound in a meat sample (2), and monitoring of the meat fat content. An Independent claim is also included for an apparatus for use in the above process, comprising a precision thickness meter (1) and ultrasound emission (3) and reception (4) equipment. A signal digitizer (6) serving a computer (7), and pulsing equipment (5) are also fitted.
