Abstract

Levaduras transformadas genéticamente capaces de asimilar lactosa. La presente invención consiste en la construcción de una estirpe de levadura de panadería capaz de asimilar lactosa, diseñada para que pueda ser propagada en lactosuero, el subproducto acuoso que resulta de la fabricación de quesos. La capacidad de utilizar lactosa ha sido conferida a la levadura panadera por la expresión de dos genes de otra levadura filogenéticamente próxima, Kluyveromyces lactis, que codifican una permeasa de lactosa y una b-galactosidasa. La transformación genética del organismo receptor (levadura panadera) ha sido realizada con fragmentos lineales de ADN, de secuencia definida, del organismo donador (K. lactis), desprovistos de secuencias bacterianas o de cualquier otro organismo distinto a los dos citados.
