Abstract

Horno comercial de cocinado combinado de la solicitud de patente p 9402609 mejorado. Tiene como única fuente de calor para la calefacción y para la generación de vapor un quemador (3) a gas del tipo cilíndrico de malla y una cámara de combustión (4) cilíndrica cerrada, trabaja en cinco modos de cocinado alcanzando la saturación de vapor por debajo de 100ºC y una elevada humedad hasta 250ºC, combinando la convección de aire caliente mediante una turbina (5) central y la generación de vapor. Los tubos (21) generadores del vapor forman un circuito rodeando la turbina (5) para los humos de la combustión los cuales calientan su superficie, sobre la cual un atomizador (25) dispersa un caudal de agua calentada en un intercambiador (7) de calor humos-agua. Los humos pueden ser recuperados para su contribución al calentamiento de la cámara (2) de cocinado mediante una caja (10) de absorción. Figura 1.
