Las mejoras consisten en la modificación del equipamiento enzimático de este microorganismo, obteniéndose una nueva cepa (con número de acceso CECT 4595), cuya característica principal es que está desprovista de las actividades proteinásica y acidificante (Lac{sup,- , Prot{sup,- ).
