Abstract
Mejoras en la patente de invención nº 9302713 por microorganismo de la especie Lactococcus. lactis ssp. lactis CECT 4478 utilizable para la fabricación de queso. Las mejoras consisten en la modificación del equipamiento enzimático de este microorganismo, obteniéndose una nueva cepa (con número de acceso CECT 4595), cuya característica principal es que está desprovista de las actividades proteinásica y acidificante (Lac{sup,- , Prot{sup,- ). El nuevo microorganismo se utiliza como iniciador para la fabricación de quesos de vaca, oveja y cabra, acelerando su maduración.Improvements in invention patent No. 9302713 for a microorganism of the Lactococcus species. lactis ssp. lactis CECT 4478 usable for the manufacture of cheese. The improvements consist of the modification of the enzymatic equipment of this microorganism, obtaining a new strain (with accession number CECT 4595), whose main characteristic is that it is devoid of proteinase and acidifying activities (Lac {sup, -, Prot {sup, -). The new microorganism is used as an initiator for the manufacture of cow, sheep and goat cheeses, accelerating their maturation.
