CEPA DE LEVADURA DE PANADERIA CECT10868 Y CEPA DE PANADERIA CECT10869. SU METODO DE OBTENCION POR TECNICAS DE ADN RECOMBINANTE Y SU APLICACION COMO LEVADURAS DE PANADERIA. LA PRESENTE INVENCION CONSISTE EN LA OBTENCION DE UNA CEPA INDUSTRIAL DE LEVADURA DE PANADERIA CAPAZ DE EXPRESAR Y, EXPORTAR AL EXTERIOR CELULAR LA ENZIMA ENDOXILANASA X24 DE ASPERGILLUS NIDULANS Y EN LA OBTENCION DE UNA CEPA INDUSTRIAL DE PANADERIA CAPAZ DE EXPRESAR Y EXPORTAR AL EXTERIOR CELULAR. CONJUNTAMENTE, LA ENZIMA ENDOXILANASA X24 DE ASPERGILLUS NIDULANS Y LA ENZIMA AL-AMILASA DE ASPERGILLUS ORYZAE, CON EL FIN DE AUMENTAR EL PROCESO DE DEGRADACION DE LAS HEMICELULOSAS Y, ALMIDON PRESENTES EN LA HARINA Y, CONSECUENTEMENTE, MEJORAR EL VOLUMEN, TEXTURA Y, VIDA MEDIA DEL PAN ELABORADO. PARA ELLO SE HAN INTRODUCIDO EN LA LEVADURA LOS GENES CORRESPONDIENTES A ESTAS ENZIMAS Y SU EXPRESION SE HA REGULADO POR UN PROMOTOR TIPICO DE LEVADURA. COMO ES EL DEL GEN DE LA ACTINA (PACT1), QUE ES, ADEMAS, FUNCIONAL EN LAS CONDICIONES INDUSTRIALES DE CRECIMIENTO EN MELAZAS. SU APLICACION EN TECNICAS DE INGENIERIA GENETICA Y LEVADURA DE PANADERIA.
