Abstract
Process which comprises the stages of: a) increasing the water content of the vegetables b) partially cooking the vegetables from stage a) c) freezing the partially cooked vegetables from stage b) d) thawing the frozen vegetables e) optionally re-forming the partially cooked, frozen and thawed vegetables to form an extruded product, incorporating other food ingredients as necessary and f) removing sufficient moisture from the thawed or extruded vegetables to make them stable for storage at ambient temperature.
