Abstract

Process for the selection of yeasts which are overproducers of amino acids in continuous culture controlled by pH which can be used in the food industry to produce biomass having a high amino acids content as a supplement for animal feedstuffs and human food, characterized in that delivery of the medium from the feed tank 1 to the culture tank 2 is regulated by a peristaltic pump 3 connected to a pH meter 4 which measures the acidity of the culture medium. The feed tank contains high concentrations of a toxic analogue of the amino acid which it is desired to overproduce. Entry of fresh medium into the culture tank causes poisoning of the yeast population, except those superproducing the amino acid in question, which will grow. As they grow the pH falls, causing further medium with higher concentrations of the toxic agent (and therefore the production of amino acids) to enter until the maximum concentration which the yeasts can tolerate is reached.
