Abstract
The compsns. which have similar physical characteristics to a solid fat at ambient temp. (around 20 deg.C), contain satd. fatty acids (S), mono-unsatd. fatty acid (M) and polyunsatd. fatty acids (P) in the following proportions (given as S%, M%, P%, M/S ratio, P/S ratio): 33.3, 33.3, 33.3, 1.0, 1.0; 37.0, 37.0, 26.0, 1.0, 0.7; 21.5, 64.5, 14.0, 3.0, 0.7; 20.0, 60.0, 20.0, 3.0, 1.0. Solids content determined by low-resolution NMR according to IUPAC 2.150 is 10-35% at 20 deg.C and 0-2% at 35 deg.C.
