Abstract

The process for regenerating olive brines and other vegetable products for their subsequent use corrects the pH of the brines prior to their treatment with active charcoal. Next, this absorbent is decanted together with the greater part of the solids in suspension by virtue of the addition of a suspension of bentonite, filtering then takes place with the aid of diatomaceous earths, and the solution is preserved by the addition of ascorbic acid or other antioxidants and maintaining anaerobic conditions. This process aims to partially purify the brines in which the olives and other vegetable products are preserved and/or ferment so that they can be reused or used as control liquids in packaging.
