CONSISTE EN PREPARAR, EMBUTIR Y CURAR LA SOBRASADA, ELIMINAR LUEGO LA ENVOLTURA, REFINAR Y HOMOGENIZAR LA MASA MEDIANTE REFINADORA (1), HASTA CONSISTENCIA PASTOSA, DISTRIBUIR PORCIONES DE LA MASA MEDIANTE DOSIFICADORES (3) EN ENVASES, INDIVIDUALES E; ENFRIAR SUAVEMENTE LA MISMA EN CAMARA (6), POR DEBAJO DE LOS -15GC, APLANARLA, MEDIANTE PISON (7), CALENTADO O NO, HASTA NIVELAR CON LOS BORDES DEL ENVASE Y CERRARLOS MEDIANTE TAPAS LAMINARES (9), MIENTRAS SE SOMETE EL CONJUNTO A LA ACCION DEL VACIO EN CAMARA (11). LA REFRIGERACION SE PREVE TAMBIEN EN CUALQUIERA DE LAS FASES ANTERIORES A LA DOSIFICACION, POR DEBAJO DE LOS 10GC.
