Description

    TECHNICAL FIELD
  • The invention proposed in the present specification relates to a charcoal oven intended for cooking food. The proposed charcoal oven is formed by a closed body for roasting food therein, where the temperature generated by means of burning wood or charcoal is retained and distributed in a novel manner by means of cast-iron plates.
  • The proposed invention provides novel features in the smoke evacuation and flame retention systems. In that sense, it has an internal firebreak system with a novel design, as well as an improved external firebreak system.
  • PRIOR ART
  • The invention proposed in the present specification is based on the experience accumulated during years of manufacturing and marketing Utility Model U201430303. This prior art to the proposed invention, the registration of which as a Utility Model was requested on 07-03-2014 and granted on 04-06-2014, has been in production and in use to date, providing the applicant with sufficient experience for the development of the solutions that are proposed in the present specification and represent improvements over the previous innovation.
  • DISCLOSURE OF THE INVENTION
  • Taking the earlier model as a reference, the model proposed in the present specification includes, in a novel manner, two cast-iron plates(28) which, together with the new firebreak system, with an internal portion and an external portion made up of a conical hat (9) and an expansion duct (14), make the oven more energy efficient and considerably reduce the consumption of the fuel used, whether it is wood or charcoal.
  • The cast-iron plates (28) are designed to save energy, since they refract more heat onto the product to be prepared, which leads to shorter cooking times and lower fuel consumption.
  • At the same time, the design of the cast-iron plates (28) consists of a set of parallel guides located on each face of the sides of the oven and manufactured from a single solid part made of iron by a casting method. The guides of the cast-iron plates (28) are used to modify the height of the grills or cooking accessories, thereby better controlling the temperature at which the food is cooked.
  • The new system with cast-iron plates (28) replaces the system with guides for supporting grills or cooking accessories. In the past, this system was formed by angular sheets of welded metal, while now the cast-iron plates (28) are located on the sides of the burning chamber, and is fixed by special screws, turning them into an interchangeable part, which is important for their maintenance and replacement, if necessary. Furthermore, with this system, the absence of deterioration in the positioning guides due to misuse or temperature overload is achieved, preventing the drawback of the grills or cooking accessories stopping or snatching as they slide along the guides holding them.
  • The internal firebreak panel (15) in the model proposed in the present invention represents an innovation which, while maintaining all the advantages of the predecessor system, incorporates new features achieved by its new design. Two openings (15.1) are arranged in said panel in the rear portion thereof, whereby the quicker exit of the smoke resulting from the grilling process from the cooking chamber is achieved by means of the Venturi effect. Furthermore, due to its larger size, not only can it be used as a firebreak or safety barrier, rather it can also be used to brown the product being prepared by functioning as a heat source located on top of the cooked product. The internal firebreak panel (15) is located by means of special screws at the rear portion of the oven and hung from the upper portion of the oven body by means of supports (16) specifically designed to that end.
  • The external firebreak system is improved with respect to its predecessor, making it easier to clean and taking up less space, facilitating its installation under existing suction hoods. This system is formed by 2 parts, the first part being an expansion duct (14) made up of a lower component (14.1) and an upper component (14.2), and the second part is located above same and is referred to as conical hat (9). The lower component (14.1) of the expansion duct (14) is made up of a rectangular sheet metal bent to form a cylindrical surface on which there is located, welded and perpendicular to the former, a part in the form of a circular sector on the outer and inner rings of which there are located, welded thereto, two rectangular sheet metals bent to form respective cylinders, with the outer cylinder being of a greater height than the inner cylinder. On the circular sector of the lower component (14.1) there is located, welded on lifting elements, the upper component (14.2) of the expansion duct (14), made up of a rectangular sheet metal bent to form a cylindrical surface having the upper face concealed by a welded circular sheet metal, such that the smoke rising through the inside of the lower component (14.1) would pass through the space generated by the lifting elements and would be pushed upwards by the cylindrical outer surface of greater height, but the possible flame that would have reached here would be blocked by the circular sheet metal of the upper component (14.2). There is arranged, topping the preceding set, the conical hat (9), a frustoconical-shaped part made of sheet metal with its upper portion concealed by a part made of circular sheet metal, and which is located supported on the outer cylinder of the lower component (14.1) from support points (9.1) that in turn generate sufficient space for the smoke to be able to exit to the outside permanently. The design of the conical hat (9) with its concealed upper portion prevents the suction of the extractor hood located on the chimney from being able to suction air from inside the cooking chamber and change the burning taking place inside the oven.
  • The oven temperature regulator is configured based on an draft shutter regulator of the oven, formed by a plate (11) located inside the fume outlet connection (8) which is operated by means of a rotary actuator (13) located in the front portion of the oven. This mechanism allows opening or closing the passage for the exit of gases by means of moving the inner plate (11), thereby regulating the temperature inside the cooking chamber and obtaining the optimum degrees of cooking.
  • The proposed invention introduces a new element with respect to the earlier model, i.e., the dividing separator (29) for dividing the cooking chamber. Its particularity is that it allows preparing different groups of food at the same time, thereby preventing contamination between them by generating two cooking volumes inside the oven, which would be equivalent to having two ovens but with a single heat source. The dividing separator (29) is fixed to the rear portion of the cooking chamber in two perforations (30) made, to that end, on the rear face of the oven body, as well as fixed with screws to the front portion of the cooking chamber, where spaces (31) have been provided for housing the mentioned screws, as well as holes (31.1) existing on the dividing separator (29), also for such purpose. By having two lines of guides, one on each side, a mirrored support is generated with respect to each of the cast-iron plates (28) arranged on the sides, with the possibility of incorporating different cooking trays on each side.
  • BRIEF DESCRIPTION OF THE DRAWINGS
  • To complement the mentioned descriptions, drawings in perspective views in which, the features of the object to be registered can be seen in an illustrative and non-limiting manner, are attached to better understand said features. The following is therefore presented:
    • Figure 1 shows a perspective view of a longitudinal section of the improved charcoal oven with its main components identified by means of numbers.
    • Figure 2 shows a perspective view of the internal firebreak panel (15), positioned in the oven in its working position over the lower face of the upper portion of the oven (12).
    • Figure 3 shows a perspective view of the internal firebreak panel (15).
    • Figure 4 shows a perspective view of the cast-iron plate (28) on the left side.
    • Figure 5 shows a perspective view of the dividing separator (29).
    • Figure 6 shows a perspective view of the two parts, the conical hat (9) and the expansion duct (14), making up the external firebreak system.
    • Figure 7 shows a perspective view of a longitudinal section of the expansion duct (14) of the external firebreak system, with the lower component (14.1) and the upper component (14.2) identified.
    • Figure 8 shows a perspective view of a longitudinal section of the external firebreak system assembled in its working position and with all its components identified.
BEST WAY TO CARRY OUT THE INVENTION
  • A guideline for carrying out the invention proposed in the present specification begins with cutting all the sheet metal plates making up the outer frame of the oven, with perforations being previously made in the sheet metals, and furthermore with the space for the door and the space for the exit of the ash drawer being cut out. Next, and from the already cut sheet metal plates, prismshaped volume for the oven body is generated by means of bending said plates.
  • Once the oven body with its corresponding openings is formed, cast-iron plates (28), which will be the guides along which the grills will run, are fixed by means of screws that go through the cast-iron plates (28) through drill holes (28.1) arranged therein and thereby being fixed to both side walls inside the oven. The guides along which the grease collection drawer (5) will run and the guides along which the ash drawer (6) will run are also installed at this time. The rail, in which the front end of the dividing separator (29) will be fixed by means of screws, will then be fixed, with the rear end of the dividing separator (29) being secured to the rear wall of the oven in respective perforations (30) prepared to that end. The next step is to fix, on the front face of the oven and on the sides of the space, the devices on which the anchorings for the door (7) will subsequently be fixed.
  • At this time the oven body is ready and the next step would consist of assembling the upper portion (12). The upper portion has been previously assembled from a metal sheet on which the necessary perforations are made and then bent to form the necessary prismatic volume, matching the dimensions of the main body of the oven that would go underneath. There is located in this upper portion (12) the internal firebreak plate (15), which is fixed to the rear portion by means of screws and to the front portion by means of two supports (16).
  • Once the oven body and the upper portion (12) are assembled, in order to finish the construction, it would be required to place in the upper portion the external firebreak that is in turn made up of two parts that are joined together only by gravity and made up of sheet metal die-cut and shaped to a cylindrical shape, of the lower component (14.1) and the upper component (14.2) of the expansion duct (14), and the conical shape of the hat (9).
  • With the oven already assembled, the finishing process remains to be carried out. This would begin by polishing all outer surfaces and a painting process according to the aesthetic requirements requested by the client.
