Abstract
Die Trocknung oder die Konzentrierung von Lebensmitteln erfolgt nach dem Stande der Technik überwiegend durch Eindampfen oder Gefriertrocknung. Während beim Eindampfen wertvolle Bestandteile wie Vitamine zerstört werden, ist die Gefriertrocknung schonend, aber sehr aufwändig. Aufgabe der Erfindung ist also die Bereitstellung einer Möglichkeit zum Trocknen oder Konzentrieren von Stoffen, die gegenüber den behandelnden Stoffen schonend und zugleich weniger aufwändig ist.The drying or concentration of food is carried out according to the prior art mainly by evaporation or freeze-drying. Erfindungsgemäß ist der zu behandelnde Stoff (20) in einem Druckbehälter (2) bei Unterdruck einem im Kreislauf geführten Gasstrom ausgesetzt. Aus dem Stoff (20) verdampfendes Wasser wird mit einer Wärmetauscherfläche (11) in Kontakt gebracht, an dem es zumindest teilweise kondensiert und abgeleitet. Die Wärmetauscherfläche (11) steht dabei bevorzugt mit einem kryogenen Medium, beispielsweise Flüssigstickstoff oder flüssiges Kohlendioxid, in Wärmekontakt.
