Verfahren zur Verminderung der Acrylamidbildung beim Erhitzen von aminogruppenhaltigen Verbindungen in Gegenwart von reduzierenden Substanzen, dadurch gekennzeichnet, dass man die aminogruppenhaltigen Verbindungen vor dem Erhitzen mit Ascorbinsäure und/oder Vitamin E mischt.1.
