Dans cet exemple, on a utilisé, en plus du germe de blé et de la farine de sarrasin, deux autres fractions intéressantes pour leur qualité nutritionnelle (son de riz et remoulages de blé). Les tests réalisés dans cette étude sont faits chez la souris saine au cours du vieillissement (stress oxydatif chronique) et dans un deuxième temps chez la souris à la suite d'un stress oxydatif aigu provoqué par un choc endotoxinique. La deuxième partie de cette étude permet d'évaluer l'effet de la supplémentation avec du germe de blé, de la farine de sarrasin, du son de riz et des remoulages de blé sur la survie des souris.
Chez les animaux soumis à un stress oxydatif chronique (souris saines vieillisantes), les échantillons du péritoine sont prélevés après 5 et 20 semaines de supplémentation. Chez les souris soumises à un stress oxydatif aigu (choc endotoxique), les échantillons sont prélevés après 20 semaines de supplémentation, avant le choc, puis 2 heures et 24 heures après le choc.

Claims (19)
- Produit céréalier possédant un fort pouvoir anti-oxydant, caractérisé par le fait que ledit pouvoir anti-oxydant, tel que mesuré par la méthode ORAC (Oxygen Radical Absorbance Capacity), est supérieur ou égal à 17 µmol équivalent de Trolox par gramme de produit fini (µmol TE/g), ledit pouvoir oxydant étant essentiellement apporté par la présence comme ingrédient d'au moins une fraction de céréale ou de pseudo-céréale.
- Produit céréalier selon la revendication 1, contenant au moins 4 équivalents-milligrammes d'acide gallique de polyphénols totaux par gramme de produit fini (Eq. mg d'acide Gallique/g).
- Produit céréalier selon l'une ou l'autre des revendications 1 et 2, contenant au moins un polyphénol choisi parmi les flavonoïdes, tels que la quercétine et la rutine, et les acides phénoliques, tels que les acides hydroxybenzoïques, les acides hydroxycinnamiques, l'acide p-hydroxybenzoïque, l'acide vanillique, l'acide p-coumarique, l'acide sinapique, l'acide férulique et ses dérivés estérifiés comme le γ-oryzanol, ainsi que leurs mélanges.
- Produit céréalier selon l'une quelconque des revendications précédentes, contenant :au moins 50 mg de magnésium pour 100 g de produit fini et/ouau moins 0,8 mg de zinc pour 100 g de produit fini et/ouau moins 1 µg de sélénium pour 100 g de produit fini.
- Produit céréalier selon l'une quelconque des revendications précédentes, contenant :au moins 0,20 mg de vitamine B1 pour 100 g de produit fini et/ouau moins 40 µg de vitamine B9 pour 100 g de produit fini.
- Produit céréalier selon l'une quelconque des revendications précédentes, tel que ladite céréale ou pseudo-céréale est choisie parmi le millet, le riz, le sarrasin, l'orge, le maïs, l'avoine, le blé, le sorgho, le maïs.
- Produit céréalier selon l'une quelconque des revendications précédentes, tel que ladite fraction est choisie parmi la farine, le son, les remoulages et les germes, ainsi que leurs mélanges.
- Produit céréalier selon l'une quelconque des revendications précédentes, tel que ladite fraction est choisie parmi le germe de blé, les remoulages blancs de blé, la farine de sarrasin, le son de riz, ainsi que leurs mélanges.
- Produit céréalier selon l'une quelconque des revendications précédentes, tel que ledit produit céréalier est un produit de biscuiterie ou de panification sèche contenant de la farine de blé comme ingrédient.
