Les huiles peroxydées utilisées dans le procédé selon l'invention sont végétales et/ou animales. Elles sont choisies dans le groupe des corps gras éthyléniques tels que l'huile d'olive, d'arachide, de sésame, de maïs, de tournesol, d'amande douce, ou dans le groupe des acides gras polyinsaturés comme l'huile d'onagre, de bourrache, de cassis, de germe de blé, ou encore dans le groupe des huiles animales comme celles issues du poisson. Cette liste n'est pas limitative.
Claims (13)
- Procédé de peroxydation d'un corps gras comprenant les étapes consistant à :le corps gras une fois peroxydé présentant un taux de malondialdéhyde inférieur à 0,30 ppm par unité de peroxyde.a) introduire le corps gras dans un récipient susceptible d'être fermé ;b) irradier le corps gras par un rayonnement X, gamma ou béta, pour initier la réaction ;
caractérisé par le fait qu'il comprend l'étape consistant, entre les étapes a) et b) à :c) introduire de l'oxygène gazeux dans ledit récipient à une pression comprise entre 1.105 et 6.105 Pa (1 et 6 bars), et fermer le récipient, - Procédé selon la revendication 1 dans lequel le rayonnement ionisant est appliqué essentiellement pour initier la réaction de peroxydation.
- Procédé selon la revendication 1 dans lequel le rayonnement ionisant est appliqué pendant toute ou sensiblement toute la réaction.
- Procédé selon les revendications 1 à 3, consistant à ajouter au corps gras préalablement à toute peroxydation habituelle une faible quantité de corps gras ionisé, jouant le rôle d'amorce afin de réduire la durée de la réaction.
- Procédé selon les revendications 1 à 4, consistant à introduire de l'oxygène gazeux à une pression de 2.105 Pa (2 bars).
- Procédé selon les revendications 1 à 5, consistant à fixer préalablement à la réaction les quantités d'oxygène et de rayonnement en fonction de l'indice de peroxyde souhaité dans le corps gras peroxydé.
- Procédé selon les revendications 1 à 6, consistant à soumettre le corps gras à un rayonnement gamma, l'énergie transmise étant comprise entre 10 et 100 kGy.
- Procédé selon les revendications 1 à 7, consistant à choisir le corps gras parmi les corps gras animaux et/ou végétaux
- Procédé selon les revendications 1 à 8, consistant à utiliser de préférence des huiles végétales éthyléniques comme l'huile d'olive, d'arachide, de sésame, de maïs, de tournesol, d'amande douce, ou des huiles végétales polyinsaturées comme l'huile d'onagre, de bourrache, de cassis, de germe de blé, ou encore dans le groupe des huiles animales comme celles issues du poisson.
- Procédé selon les revendications 1 à 9, consistant à choisir des conditions réactionnelles permettant d'obtenir un corps gras peroxydé comprenant un taux de MDA de préférence compris entre 0,10 et 0, 3 ppm par unité de peroxyde.
- Procédé selon les revendications 1 à 10, consistant à ajouter préalablement à la soumission au rayonnement ionisant un actif thermosensible au corps gras.
- Procédé selon les revendications 1 à 11, consistant à rajouter un actif thermosensible choisi notamment dans les groupes des antibiotiques, des vitamines liposolubles, des enzymes ou des protéines.
- Procédé selon les revendications 1 à 12, consistant à agiter le corps gras lors de la soumission au rayonnement ionisant et/ou juste après.
