In dem Mischgefäß 8 wird Wasser aus Zuleitung 9 oder rückgeführte Schlempe aus Leitung 10 durch Zumischung von Ca2⊕-Ionen aus Leitung 11, von Lauge aus Leitung 12 oder von Säure aus Leitung 13 aufbereitet bzw. auf den gewünschten pH-Wert eingestellt. Die auf diese Weise erhaltene wässerige Vorlageflüssigkeit wird nötigenfalls durch Einleitung von Frischdampf aus Leitung 14 auf die gewünschte Prozeßtemperatur gebracht und über Leitung 7 in das Aufschlußgefäß 4 abgezogen. Eine weitere Dampfzuleitung 15 zum Konstanthalten der Temperatur während des Aufschlußvorganges führt zum Aufschlußgefäß 4. Die aufgeschlossene Mischung wird durch öffnen eines Absperrorganes 16 vom Auslaß am konisch ausgebildeten Boden des Gefäßes 4 mittels einer. Aus dem Tank 19 wird die verzuckerte Maische mittels einer zweiten Pumpe 20 über einen zweiten Wärmeaustauscher 21 nach Einstellung der gewünschten Maischekonzentration mit Wasser bzw. Schlempe zu einer nicht dargestellten Gärstation geför- dert. In die Schlempeleitung 10 ist eine Absetzvorrich- tung 22 (z.B. Der pH-Wert der sich nunmehr im Verzuckerungstank befindlichen Mischung wird durch Säurezusatz auf 4,5 bis 5,0 eingestellt und anschließend wird Amyloglucosidase zugesetzt. Nach einer Verweilzeit von mindestens 30 min wird die teilverzuckerte Maische zur Gärstation gefördert, wobei sie sich im zweiten Wärmeaustauscher 21 auf etwa 30°C abkühlt. Nach Einstellung der gewünschten Maischekonzentration mit Wasser bzw. Schlempe wird im Gärbottich die verzuckerte Maische sodann mit Hefemaische versetzt. Der Einsatz von in den Wärmeaustauschern vorgewärmtem Wasser sowie von dekantierter Schlempe erfolgt wie beim inden Beispielen 1 und 2 beschriebenen diskontinuierlichen Verfahren.

Die α-Amylase wurde als wässerige Lösung mit 210.000 MWU/ml (modifizierte Wohlgemut-Einheiten), die AMG als wässerige Lösung mit 150 GAU/ml (glucosidase activity units) eingesetzt.

Setzt man 0,6 bis 0,75 m3 dekantierte Schlempe, welche mit einer Temperatur von 80 bis 90° C anfällt, als Vorlageflüssigkeit ein, ergibt sich zum Aufwärmen von einer mittleren Temperatur von 85° C auf 95° C (dt = 10° C) ein Energiebedarf von nur 25 bis 31 MJ (entsprechend 11bis 14 kg Dampf). Dabei wird noch nicht in Rechnung gestellt, daß die zum Erhitzen der Schlempe nötige Energiemenge infolge des Trockensubstanzgehaltes der Schlempe sogar geringer ist als die zum Erhitzen der gleichen Menge Wassers notwendige. Es werden somit insgesamt nur 59 bis 66 MJ, d. h. 26bis 29,5 kg Dampf pro hl Alkohol benötigt.
