Se relaciona la presente invención con un procedimiento para la obtención de pepsina a partir de proventrículos de pollos, el cual consta de 5 etapas principales; a) una etapa de extracción, donde se usa cáscara de arroz pulverizada como agente abrasivo para producir la ruptura y desintegración de los tejidos de los proventrículos de pollo y permitir asi la extracción del pepsinógeno intracelular; b) Una etapa de saturación, en la cual se logra la separación de proteínas sin actividad enzimática y de fragmentos tisulares; c) una etapa de precipitación isoeléctrica y activación, en la cual el pepsinógeno precipita y luego se convierte a su forma activa, la pepsina; d) una etapa de proteólisis y purificación; y e) una etapa de secado y pulverización al final de la cual obtenemos la preparación de pepsina de pollo.The present invention is related to a procedure for obtaining pepsin from chicken proventricles, which consists of 5 main stages; a) an extraction stage, where pulverized rice husk is used as an abrasive agent to produce the rupture and disintegration of the tissues of the chicken proventricles and thus allow the extraction of intracellular pepsinogen; b) A saturation stage, in which the separation of proteins without enzymatic activity and tissue fragments is achieved; c) an isoelectric precipitation and activation stage, in which pepsinogen precipitates and then converts to its active form, pepsin; d) a proteolysis and purification step; and e) a drying and spraying stage at the end of which we obtain the preparation of chicken pepsin.
