Abstract

Se refiere a un proceso para preparar una fracción de cebada fibrosa, altamente soluble, que tiene niveles incrementados de beta-glucano y de la fibra de la dieta total, cuando se compara con una cebada no procesada, el proceso comprende: (a) tratar la cebada de una manera suficiente para desactivar sustancialmente la totalidad del beta-glucano contenido en la cebada; (b) reducir el tamaño de la cebada hasta una fracción burda o tosca y una fracción fina, en donde el contenido de beta-glucano en la fracción burda o tosca, es más grande que el contenido del beta-glucano de la cebada de partida; y (c) separar la fracción burda o tosca de la fracción fina. La presente invención comprende además el producto del proceso anterior.
