Abstract

This document describes the methods and compositions for the replacement of micronutrients, especially calcium in a food product, such as a nutritional bar, to minimize hardness and extend its shelf life. The methods and compositions of the present invention comprise the application of a layer of a micronutrient, especially calcium, to a matrix of a core of a fortified food bar. The matrix is a layer of low moisture jam or coating, preferably a chocolate or caramel layer or coating containing calcium or other micronutrient solubilized therein. The resulting food product advantageously contains a substantial amount of micronutrients without adversely affecting its organoleptic qualities such as texture.
