Изобретение относится к области пищевой промышленности, в частности к диетической продукции с сохранением органических витаминов и минералов в овощах, фруктах и ягодах. Задачей изобретения является создание экономичного способа получения витаминного желейного продукта из овощей, фруктов и ягод со стопроцентным сохранением витаминов и минералов, обладающего высокой биологической ценностью при длительном сроке хранения. Способ получения витаминного желейного продукта из овощей, фруктов и ягод предусматривает очищение, мойку, измельчение сырья до однородной массы и/или получения сока с добавлением желеобразующего агента и с применением быстрого замораживания сырья и вакуумного обезвоживания, причем обезвоживание происходит до тех пор, пока остаточная влажность не достигнет величины оптимальной влажности, которая зависит от вида сырья. Таким образом, преимуществами прилагаемого способа получения витаминного желейного продукта из овощей, фруктов и ягод являются экономичность, возможность стопроцентного сохранения витаминов и минералов в готовом продукте в виде желе (пюре, пасты, джема, мармелада), возможность получения диетического и органического продукта питания, обладающего высокой биологической ценностью, и продления срока годности, с повышенной усвояемостью при употреблении, а также без примесей синтетического происхождения и сахара, консервантов.The invention relates to the field of food industry, in particular to diet products with the preservation of organic vitamins and minerals in vegetables, fruits and berries. Thus, the advantages of the attached method for producing a vitamin jelly product from vegetables, fruits and berries are economy, the possibility of 100% preservation of vitamins and minerals in the finished product in the form of jelly (mashed potatoes, pasta, jam, marmalade), the possibility of obtaining a dietary and organic food product having high biological value, and extension of shelf life, with increased digestibility when consumed, as well as without impurities of synthetic origin and sugar, preservatives.
