Abstract

A hot, foamed sugar mass which has a water content of between approx. 4% by weight and approx. 15% by weight and which comprises a dispersion of air in a sugar phase which is based on sucrose, glucose, glucose syrup, honey and invert sugar, or mixtures theroef, and which comprises a surface-active foaming agent which consists of a disaccharide monoester of saturated C10-C18 edible fatty acids. The foamed sugar mass is prepared by foaming at a temperature between 60 degrees C and 140 degrees C, preferably between 80 degrees C and 140 degrees C, in the presence of the abovementioned disaccharide monoester. The hot, foamed sugar mass can be used for producing confectionery products which comprise vegetable, in particular fat-containing and oil-containing, substances.
