Claims (7)
1. Fremgangsmåde til behandling af væskeformig æggehvide fra hønseæg eller lignende omfattende trinnene med fjernelse af skaller fra æggene, så der fås en specifik mængde væskeformig æggehvide. filtrering og omgående nedkøling af den væskeformige æggehvide ved en temperatur i et område bestemt ved at holde væsken inden i en lukket og omrystet beholder; varmebehandling ved pasteurisering af den væskeformige æggehvide inden for et bestemt tidsinterval ved trinnet med fjernelse af skaller med afgasning af væsken og med tilsætning af carbondioxid og udførelse af en biokemisk behandling af den væskeformige æggehvide under forhold med kontrolleret temperatur inden i en steril beholder med efterfølgende slutopbevaring ved rumtemperatur kendetegnet ved, at trinnet med varmebehandling udføres ved en temperatur på 54 - 57 0 celsius i omkring 2,5 - 3 minutter; og trinnet med biokemisk behandling omfatter et trin med stationering af den væskeformige æggehvide til en temperatur mellem 38 og 50 0 celsius i et tidsrum mellem 6 og 48 timer inden i en aseptisk beholder eller direkte i en slutemballage med efterfølgende nedkøling til rumtemperatur.
2. Fremgangsmåde ifølge krav 1 kendetegnet ved, at trinnet med varmebehandling udføres via en ohmsk opvarmer.
3. Fremgangsmåde ifølge krav 1 eller 2 kendetegnet ved, at filtreringstrinnet udføres ved en temperatur mellem 0 og 4 0 celsius.
4. Fremgangsmåde ifølge et eller flere af de foregående krav 1 til 3 kendetegnet ved, at trinnet med varmebehandling udføres inden for 48 timer efter trinnet med fjernelse af skaller.
5. Fremgangsmåde ifølge et eller flere af de foregående krav 1 til 4 kendetegnet ved, trinnet med afgasning udføres under vakuum ved omkring -0,25 / -0,3 bar.
6. Fremgangsmåde ifølge et eller flere af de foregående krav 1 til 5 kendetegnet ved, at stationeringen foretages ved at tilsætte CO2 til pH-korrektion.
7. Fremgangsmåde ifølge krav 6, hvor pH-korrektionen er til opnåelse af en pH-værdi på 7,6 til 8,5.
