Claims (21)

1. Sammensætning, der omfatter i) mindst en modificeret gummi, eventuelt med et proteinindhold, ii) mindst en fedtopløselig, aktiv bestanddel og/eller et farvestof, og iii) eventuelt mindst en adjuvans og/eller en excipiens; hvor den modificerede gummi er en modificeret plantegummi, og hvor den modificerede gummi er en gummi, der har gennemgået hydrolyse til degradering af polysaccharidet og, hvor relevant, proteindelen, hvor den fedtopløselige, aktive bestanddel og/eller farvestoffet er et fedtopløseligt vitamin, et caroten eller en strukturelt beslægtet polyenforbindelse, og hvor den fedtopløselige, aktive bestanddel og/eller farvestoffet er i en matrix af den modificerede gummi, hvorved sammensætningen er i form af et pulver, og hvorved sammensætningen er opnået ved hjælp af en fremgangsmåde, der omfatter følgende trin: I) fremstilling af en vandig opløsning eller kolloid opløsning af en modificeret gummi, hvor den modificerede gummi er en modificeret plantegummi, og hvor den modificerede gummi er en gummi, der har gennemgået hydrolyse til degradering af polysaccharidet og, hvor relevant, proteindelen, II) eventuelt tilsætning af mindst en vandopløselig excipiens og/eller adjuvans til opløsningen fremstillet i trin I), III) fremstilling af en opløsning eller dispersion af mindst en aktiv bestanddel, fortrinsvis af mindst en fedtopløselig, aktiv bestanddel og/eller et farvestof og eventuelt mindst en fedtopløselig adjuvans og/eller excipiens, hvor den fedtopløselige, aktive bestanddel og/eller farvestoffet er et fedtopløseligt vitamin, et caroten eller en strukturelt beslægtet polyenforbindelse, IV) blanding af opløsningerne fremstillet i trin I) til III) med hinanden, V) homogenisering af den således resulterende blanding, VI) eventuelt tilsætning af et tværbindingsmiddel udvalgt fra gruppen, der består af reducerende sukkerarter, (glyco)proteiner, proteinhydrolysater og (glyco)peptider, VII) omdannelse af dispersionen opnået i trin V) og/eller VI) til et pulver, VIII) eventuelt tørring af pulveret opnået i trin VII), IX) eventuelt udsættelse af det tørre pulver for varmebehandling eller for enzymatisk behandling til tværbinding af den modificerede plantegummi.
2. Sammensætning ifølge krav 1, hvor proteinindholdet i plantegummien er ca. < 10 vægt-% baseret på den totale vægt af plantegummien.
3. Sammensætning ifølge krav 1, hvor carotenet eller den strukturelt beslægtede polyenforbindelse er et carotenoid, såsom a-caroten, β-caroten, 8'-apo^-carotenal, 8'-3ρο-β-carotensyreestere, canthaxanthin, astaxanthin, lycopen, lutein, zeaxanthin, crocetin, a-zeacaroten, β-zeacaroten eller en blanding deraf.
4. Sammensætning ifølge krav 3, hvor carotenoidet er β- caroten.
5. Sammensætning ifølge krav 1, hvor det fedtopløselig vitamin er vitamin A eller E.
6. Sammensætning ifølge et hvilket som helst af kravene 1 til 5, hvor der yderligere er mindst én forbindelse til stede udvalgt fra gruppen, der består af monosaccharider, disaccharider, oligosaccharider, polysaccharider, glycerol, triglycerider, vandopløselige antioxidanter og fedtopløselig antioxidanter.
7. Sammensætning ifølge krav 6, hvor mono- eller disaccharidet er saccharose, invertsukker, xylose, glucose, fructose, lactose, maltose og sukkeralkoholer.
8. Sammensætning ifølge krav 6, hvor oligo- eller polysaccharidet er en stivelse, et stivelseshydrolysat eller en modificeret stivelse.
9. Sammensætning ifølge krav 8, hvor stivelseshydrolysatet er en dextrin, en maltodextrin eller en glucosesirup.
10. Sammensætning ifølge krav 6, hvor triglyceridet er en vegetabilske olie eller fedt.
11. Sammensætning ifølge et hvilket som helst af ovennævnte krav, hvor der yderligere er en co-emulgator til stede udvalgt fra gruppen, der består af mono- og diglycerider af fedtsyrer, polyglycerolestere af fedtsyrer, lecithiner og sorbitanmonostearat.
12. Sammensætning ifølge et hvilket som helst af kravene 1 til 11, hvor mængden af den modificerede plantegummi i) er fra ca. 0,5 til ca. 60,0 vægt-%, mængden af den (fedtopløselige) aktive bestanddel og/eller farvestoffet er fra ca. 0,1 til ca. 80,0 vægt-%, og mængden af adjuvansen og/eller excipiensen iii) er fra ca. 10 til ca. 95 vægt-%, fortrinsvis fra ca. 60 til ca. 90 vægt-% baseret på den totale mængde af sammensætningen.
13. Sammensætning ifølge et hvilket som helst af kravene 1 til 12, hvor den modificerede plantegummi har en proteindel, der er hydrolyseret i en grad på op til 30 %, fortrinsvis i en grad fra ca. 1 til ca. 30 %, mere fortrinsvis fra ca. 1 til ca. 10 %, mest fortrinsvis i en grad fra ca. 1 til ca. 5 %.
14. Sammensætning ifølge et hvilket som helst af kravene 1 til 12, hvor den modificerede plantegummi har en proteindel, der er hydrolyset i en grad på mellem 0,05 og 10 %, fortrinsvis i en grad på mellem 0,05 og 5 %, mere fortrinsvis i en grad på mellem 0,05 og 2 %, mest fortrinsvis i en grad på mellem 0,05 og 1 %.
15. Sammensætning ifølge et hvilket som helst af kravene 1 til 14, hvor den modificerede plantegummi har en polysacchariddel, der er hydrolyseret i en grad på op til ca. 50 %, fortrinsvis i en grad fra ca. 0,05 til ca. 20 %, mere fortrinsvis i en grad fra ca. 1 til ca. 5 %.
16. Sammensætning ifølge et hvilket som helst af kravene 1 til 15 hvor den modificerede plantegummi er tværbundet med mindst én forbindelse udvalgt fra gruppen, der består af reducerende sukkerarter, proteiner, herunder proteinhydrolysater, peptider, glycoproteiner eller glycopeptider.
17. Fremgangsmåde til fremstilling af en sammensætning ifølge et hvilket som helst af kravene 1 til 16, der omfatter følgende trin: I) fremstilling af en vandig opløsning eller kolloid opløsning af en modificeret gummi, hvor den modificerede gummi er en modificeret plantegummi, og hvor den modificerede gummi er en gummi, der har gennemgået hydrolyse til degradering af polysaccharidet og, hvor relevant, proteindelen, II) eventuelt tilsætning af mindst en vandopløselig excipiens og/eller adjuvans til opløsningen fremstillet i trin I), III) fremstilling af en opløsning eller dispersion af mindst en aktiv bestanddel, fortrinsvis af mindst en fedtopløselig, aktiv bestanddel og/eller et farvestof og eventuelt mindst en fedtopløselig adjuvans og/eller excipiens, hvor den fedtopløselige, aktive bestanddel og/eller farvestoffet er et fedtopløseligt vitamin, et caroten eller en strukturelt beslægtet polyenforbindelse, IV) blanding af opløsningerne fremstillet i trin I) til III) med hinanden, V) homogenisering af den således resulterende blanding, VI) eventuelt tilsætning af et tværbindingsmiddel udvalgt fra gruppen, der består af reducerende sukkerarter, (glyco)proteiner, proteinhydrolysater og (glyco)peptider, VII) omdannelse af dispersionen opnået i trin V) og/eller VI) til et pulver, VIII) eventuelt tørring af pulveret opnået i trin VII), IX) eventuelt udsættelse af det tørre pulver for varmebehandling eller for enzymatisk behandling til tværbinding af den modificerede plantegummi.
18. Fremgangsmåde ifølge krav 17, hvor varmebehandlingen eller den enzymatisk behandling til tværbinding af den modificerede plantegummi udføres før trin VII).
19. Fremgangsmåde ifølge krav 17 eller 18, hvor den enzymatiske behandling ifølge trin IX) er en behandling med et tværbindingsenzym, især med en transglutaminase.
20. Anvendelse af en sammensætning ifølge et hvilket som helst af kravene 1 til 16 til berigelse og/eller farvning af fødevarer, drikkevarer, dyrefoder, kosmetik eller farmaceutiske sammensætninger.
21. Fremgangsmåde til fremstilling af fødevarer, drikkevarer, dyrefoder, kosmetik og farmaceutiske sammensætninger, hvor der anvendes en sammensætning ifølge et hvilket som helst af kravene 1 til 16.
