Diese Haupt-Verhefung erfolgt dann kontinuierlich, wobei ständig die bereits verhefte Flüssigkeit abgezogen und neue unverhefte Flüssigkeit zugeführt wird. Es kann damit gerechnet werden, daß bei eienr kontinuierlichen Verhefung ohne Vorbereitung von Zuchthefe in besonderen Nährlösungen nach etwa 2 Wochen eine ständige Konzentration und Hefeausbildung erreicht ist, welche eine verkaufsfähige Backhefe mit hoher Triebkraft ergibt. Diese wird nach der deutschen Patentschrift 752 725 in besonderen Emulsions-Schleudern entlüftet und anschließend in Hefe und Schlempe getrennt, sowie getrocknet. In 12 Liter Hefemilch sind 12.36 = 432 gr RS enthalten und diese ergeben 180 gr Trockenhefe, was pro Stunde einer Ausbeute an Hefetrockensubstanz von 180:432 = 43% entspricht. Der Restzuckergehalt beträgt 10%.
